Hello. I now have two fig trees full of juicy figs. I can just eat them and make fig jam, but what else wonderful can I do with them. Besos.

Ok......this is the yummiest!!

It's one of my faves, and a special recipe of mamagriff

Cross-cut the figs to about a third from the top, give 'em a little squeeze to open 'em up a bit. Place 'em snugly in an oven-proof dish, so they stand up by themselves. Spoon about a teaspoon of soft goat's cheese into each one. Then tear up some serrano/parma ham and place over the top ensuring each fig gets a bit of the ham. Then place in an oven (170ish) for 10 to 15 mins until the figs get warm, the ham starts to crisp up a little, and the cheese begins to melt. Remove from oven and then drizzle some thick balsamic glaze over the whole dish (do not use balsamic vinegar). Honey will do if you don't have the glaze. Allow to cool before devouring.

Try to eat in moderation if others are present. And of course, with the wine of your choice
